Roasted Butternut Squash Soup
Peel squash, cut into large chunks and place in large metal bowl. Pour in 3 tb melted butter and toss squash till completely coated. While tossing, sprinkle cinnamon, coriander and brown sugar. Place pieces onto half sheet pan and roast in a 350 degree oven till slightly brown and soft.
Sunday Chicken Nachos
These nachos will put you in the big chair at the game on Sunday. As always, get yourself a locally raised chicken from Makinajians Poultry Farm in Huntington, local cheeses and dairy, and organic tortilla chips. Have fun.
Lamb Burger
Mix all ingredients together and form medium-size patties. Grill on high heat to desired temperature.
Toast the rolls and top them with crumbled feta, arugula, olives and tomatoes.

Tomato Salad Sandwich
Cut tomatoes into bite-sized pieces and place in large bowl. Next, chop basil and red onions into small pieces. Place chicken pieces into a bowl and drizzle a little vinegar, lemon juice and olive oil, to desired taste and wetness. Season with kosher salt and pepper and place in refrigerator. Hollow out the inside of the bread and stuff with the salad. Wrap in tin foil and it’s ready for a day at the beach.
