Free Italian Cooking Demo
Talk to anyone who has been to Italy and they’ll rave about the food — how fresh and delicious it was, whether they dined in the small cafés or fancy restaurants. Throughout Italy there’s a commitment to great ingredients and well-honed techniques. This fall, two Italian food experts from Spuntino Wine Bar and Italian Tapas restaurant at The Gallery at Westbury Plaza are bringing that enthusiasm for great food to the Ethical Humanist Society in Garden City. Andrea Luca Rossi, Spuntino general manager, and Ryan Keough, executive chef, are giving cooking demonstrations, free of charge. Lyn Dobrin, food writer for the Enterprise-Pilot and a member of the Ethical Humanist Society, will host. “These two chefs are all about freshness,” says Dobrin, “and their commitment to sustainability is in keeping with the values of the Ethical Humanist Society.”
On Monday, Oct. 13, Gnocchi con Cinghiale Toscano is on the menu. Made with fresh ricotta, this gnocchi is lighter than typical potato gnocchi. The chefs will explain variations of spinach, bell pepper and tri-colored gnocchi and show how gnocchi paired with cinghiale Toscano — wild boar sauce — is “a match made in heaven.”
On Monday, Nov. 10, the focus is Branzino. The chefs will demonstrate how to dissect this light and flaky Mediterranean fish to get good fillets and the best ways to cook it. They will offer tips on making fish stock and tell what to look for when buying fish.
Both demonstrations begin at 7 p.m. Tastings and recipes will be provided. The Ethical Humanist Society of Long Island is at 38 Old Country Rd., Garden City (at the western end of Old Country Road, next to the large blue water tower). The demonstrations are free, although reservations are required. Call 516-741-7304 to reserve a spot.
