Noema’s Love, Nicole Cocktail Inspired By Beloved Friend Lost to Cancer
Not every cocktail’s story is a happy one. Tragedy sometimes inspires bartenders, allowing them to not only share a story with strangers throughout a service but to remember.
“Love, Nicole comes from a very dear friend we lost way too soon to cancer,” says Lisa DiPinto, owner of Noema, a new Greek restaurant in Huntington. “Nicole‘s favorite drink was the paloma. At her luncheon, we paid tribute to her by serving this cocktail after her funeral. When we decided to open Noema, I made it a point to include someone so special to us. We will always have a part of Nicole here with us.”

DiPinto describes the cocktail as “tart and delicious.”
“Unlike other venues, all of our juices are made fresh daily — attention to detail, quality of product, and what’s most important to us,” she says. “Our Executive Chef Nicholas Poulmentis prides himself on using only the freshest and most sustainably organic ingredients. That passion is carried over throughout our entire establishment, offering the purest ingredients.”
“The person who would appreciate this type of cocktail would also appreciate tequila,” she says. “That’s the base of the drink and probably one of the most important parts.”
Known for its modern take on traditional Greek cuisine, Noema offers an array of dishes from hamachi Tartar to black truffle tarama caviar to orzo paella to astakomakaronada to bougatsa (a classic Greek breakfast pastry).
DiPinto has plans to open another location in Garden City in 2023.
