Spuntino Wine Bar & Italian Tapas is hosting a Chateau Maris Wine Dinner at its location in The Gallery at Westbury on Tuesday, March 22 at 7 p.m.
Based in Languedoc, France, Chateau Maris is an acclaimed bio-dynamic winemaker which uses a system of organic farming that embraces a holistic approach to create truly exceptional wine. Chateau Maris’ wines will be paired with a complementary five-course menu created by Executive Chef Ryan Keough, which includes:
- Chicken Liver Pate Bruschette- Smoked bacon jam, braised mustard seeds. Paired with a 2013 Chateau Maris Brama Grenache Gris.
- Seared Icelandic Char- Green peas, chervil, prosecco mustard. Paired with a 2013 Le Carignan de Maris, Coteaux Peyriac.
- Smoked Pork Belly- Soft poached egg, grilled shiitake mushroom, brown butter, spinach. Paired with a 2012 La Touge Syrah.
- Grilled Black Cod- Beurre rouge, mushroom ragu. Paired with a 2012 Cur la Liviniere “ Les Anciens.”
- Dark Chocolate Cake- Spring berry, whipped ricotta. Paired with a 2010 Oeuf Neuf Maris.
